Waitrose Sees Surge in Comfort Food Sales

Waitrose has observed a notable shift in consumer purchasing habits, with sales of traditional comfort foods surging despite warmer weather. The supermarket chain reported a 110% increase in cottage pie sales in the last month. This trend extends to other hearty dishes, with retro chicken, bacon and leek pie sales up 41%, chicken korma up 67%, and chicken and ham gratin up 68%.

Alongside increased ready-meal sales, home cooks are also turning to classic recipes. Searches on Waitrose's website for traditional dishes have seen significant growth. Toad-in-the-hole recipes are up 67%, spaghetti bolognese by 91%, and rarebit mac and cheese by 57%. Trifle, another nostalgic favourite, also saw a 100% year-on-year increase in sales for its strawberry variant.

Food historian Seren Charrington-Hollis noted a high demand for cottage pies and lamb hotpots at a recent event, even in hot weather, stating guests were tired of salads. She suggested this trend, termed 'reverse comfort eating', is a psychological response to uncertainty caused by the cost of living crisis, global conflicts, and political changes. Chef Simon Wood, winner of MasterChef 2015, believes the cost of living crisis influences choices, with people seeking to replicate pub classics at home due to cutbacks on eating out. He also cited time constraints and a desire for grounding meals as factors.

Waitrose's senior innovation chef, Stephen Parkins-Knight, described the trend as people craving rich, grounding staples to recharge after being drained by the heat, pivoting back towards comfort and familiarity. Professor Rebecca Earle, a food historian at the University of Warwick, commented that using food to assuage unhappiness or distress is a long-standing human behaviour. She also noted the inclusion of dishes like chicken korma indicates a multicultural influence beyond solely post-war British fare.

The supermarket also reported a 68% increase in sales of South African red wine compared to the same period last year, aligning with the preference for richer flavours over lighter options typically associated with warmer weather.
